Wagyu to Worldwide

Japanese Black makes up 90% of all fattened cattle in Japan, Japanese Brown is the other major breed. Top-quality wagyu boasts 20-25 percent marbled fat. This extremely high degree of marbled fat is what gives wagyu beef its superior texture and taste.

Okay, to review, today in Tokyo Japan, started NOT in Tokyo. In CHINATOWN. At an OKTOBERFEST, and is now ending in an ITALIAN restaurant.  What a multicultural day.

Lunch in Chinatown, Yokohama, Kanagawa, Japan

There are four Bairan Restaurants in Chinatown.
This is a Shanghainese restaurant with over 30 years of history.

Soy Sauce and other flavorings

Dumplings

Spicy Shrimp in Chili Sauce
This is made of Chow Mein noodles tossed with egg and then placed in a skillet to create a hard shell on the bottom.  Then to get the result, I would put the Chow Mein vegetables and protein in the center of a plate, and then turn the noodles on top, crispy shell up.

The restaurant is said to sell 5,000 orders of the Bairan yakisoba each day.

Nishiki Market

A Little shopping at the Nishiki Market and Lunch

This is a 400-year-old iconic market studded with stalls offering all manner of Japanese edibles.

Nishiki Market is a narrow, five-block long shopping street lined by more than one hundred shops and restaurants. Known as "Kyoto's Kitchen", this lively retail market specializes in all things food-related, like fresh seafood, produce, knives and cookware, and is a great place to find seasonal foods and Kyoto specialties, such as Japanese sweets, pickles, dried seafood, and sushi.

This is a new LAW that the vendors are not happy about

Octopus and other stick street-food

Squid

At the Market, we stopped at a fresh fish store for lunch.

We were led past the chairs you see on the left into a back room with three tables for a private lunch.

Here is my mixed fresh fish over rice. The carafe on the left is warm broth to pour into the bowl on the right to add rice or fish to as you might desire.
